I know I've blogged about these before, but so many people have been asking for the recipe I thought I should post them again.
These are a current staple of mine because I can eat them cold as a snack.
I love that they are super quick to make and gluten, soy, sugar, and dairy free.
In Blender:
- 2 cups rolled oats (I like Trader Joe's bag of gluten free rolled oats)
- 2-2.5 cups of water
- 1 banana
- about 10 shakes of cinnamon (Trader Joe's has a non-irradiated one)
- dash of vanilla
Blend it up
I like to add either 2 handfuls of blueberries
or
I break off pieces of 80% dark chocolate
Just grill them in a skillet with coconut oil
If you make them about the size of mine (I think a total of 9 pancakes) they are about 100 calories.
They are a pancake that you don't even need syrup for cause they are not dry and the banana sweetens them.
They also won't make you tired and bloated either.
