Qunioa Tempeh Stir Fry

I love this combination of Quinoa, Tempeh, and mixed vegetables
The quinoa takes about 15 minutes on the stove to cook
I stir fried zuchinni, asparagus, tempeh, garlic, 1 spray olive oil, and at the end threw in 1 cup of spinach

The quinoa is great because it is a complete protein grain- one serving has 6g of protein. It also has no gluten for those on a gluten free diet.
The Tempeh is also good to add because it has a nutty taste and also has a ~20g protein for 4oz.
You can find it at whole foods near the dairy section right about the tofu.
