Breakfast - Having hard boiled eggs on hand makes it really easy to not have to prepare anything in the mornings.
Steamed broccoli & cauliflower - I always feel so much better when I have vegetables for breakfast
Did not look like much food, but it actually kept me full until lunch because of the protein, fat, and fiber.
Lunch- I know it is not too exciting and I was hesitant to even post these pictures, but I think it is good to see that eating healthy can really be simple and easy. I had the pre-marinated salmon from Trader Joe's and it is so good.
I am all about trying new recipes and mixing it up a lot to add variety and keep from getting bored with your food. However, sometimes routine is also good. If you have your "go to's" that work for you it can save time and energy.
I recommend writing out a list of some foods/meals that work for you for breakfast, lunch, snack, dinner, so you have a plan that you know you like and are foods that nourish.

Don't Feel Like Cooking
I've been so busy lately and I have no desire to cook at all. I normally love cooking and trying new recipes, but sometimes I go through times of not wanting to spend much time in the kitchen. So...if that is you hopefully my upcoming posts will give you some ideas and to see that you can still eat healthy without much time.
I'm also trying to save money for the adoption, so I'm trying to come up with healthy easy things that don't cost much.
I just roasted asparagus with a little olive oil and sesame seeds, sea vegetables, and sea salt (10-12 min)
Pre-marinated Wile Salmon from Trader Joe's (10 min)
Steamed vegetables in the bag from Trader Joe's (3min 30 seconds) In the microwave and in a plastic bag- I know it's horrible! I feel totally guilty that it is not organic and I just destroyed the nutrients, but I still feel like it is better to eat vegetables with little nutrients than non at all.
If you remember one thing today, add green food into your diet. Your body will thank you for it with more stabilized moods.

Salmon Dill Burgers
I made the Salmon Dill Burgers from Elana Amsterdam's cookbook "The gluten-free Almond Flour cookbook" and they turned out good. Really lemony, but super easy to make. I love making recipes that I don't have to look back at the recipe to make it again cause it is so easy to remember.
Well...mine don't look nearly as appetizing as hers do in the cookbook, but they still tasted great.
Rinse the salmon, pat dry, and cut into 1/4 inch pieces.
Mix all the ingredients together. Form into patties and cook over medium high heat for about 4-6 minutes per side (golden brown. Put burgers on a plate lined with a paper towel.
Next time I make them, I plan on adding in chopped spinach.

- 1/2 cup blanched almond flour
- 2 large eggs
- 1 tablespoon lemon zest ( if you don't have a microplane I would get one it zests things so nicely)
- 1 tablespoon finely chopped fresh dill

- 2 Tablespoons grapeseed oil
