I feel like I'm always posting the same things I will try to mix it up a little bit, but I love this breakfast
two large handfuls of kale (de-stemmed) sauteed with little bit coconut oil, red pepper flakes, and garlic
1 runny egg with sea vegetable sprinkle on it
& Berries
So quick and easy. I always feel better when I get greens and protein in for breakfast.

Runny Eggs & Kale
Recently this has been my favorite breakfast because it is so quick to make and it is just the right amount of food before working out. I just put in about two handfuls of kale torn up, 1/2 tsp coconut oil, red pepper flakes, 1 glove crushed garlic, and cook for about 5-10 min. I cook the egg so the yoke is still runny so I don't damage all the good nutrients.
I also like to sprinkle sea vegetable sprinkle on the egg, so it is a little salty.

The yolk contains 100% of the carotenoids, essential fatty acids, vitamins A, E, D, and K (6 items). The white does not contain 100% of any nutrient.
The yolk contains more than 90% of the calcium, iron, phosphorus, zinc, thiamin, B6, folate, and B12, and 89% of the panthothenic acid (9 items). The white does not contain more than 90% of any nutrient, but contains over 80% of the magnesium, sodium, and niacin (3 items).
The yolk contains between 50% and 80% of the copper, manganese, and selenium, while the white contains between 50% and 80% of the potassium, riboflavin, and protein."

Kale for Breakfast
Quick and Easy- I throw some de-stemed kale in a skillet with coconut oil, a little garlic, and a sprinkle of Eden Organic Seaweed Gomasio until wilted.
I add the eggs with the yokes still in tack (runny). It is healthier for your body to not cook the yokes, so poaching or still leaving them runny provides a better source of protein and essential fatty acids as well as the full benefit from all the nutrients in the yoke. The runny yokes actually taste really good with the kale.
I put a little fresh ground pepper on the eggs.
Good way to get some greens in my body in the morning so I'm in a good mood all day :)

Paleo Pancakes
I've made these before, but this time these were way better. I used the almond meal from Trader Joe's. I also like to eat them cold as a filling snack.
It is so nice to feel like you are eating pancake, but without the highs and lows of eating so many carbs at one time and a small amount is really satisfying.

Smoked Salmon Omelette
While staying at the hospital I would just order breakfast at Whole Foods. I had them make me this delicious omelette with a combination of eggs and egg whites, broccoli, green onions, and I just bought a package of sugar free smoked salmon to add to it.
I was only able to locate one brand that does not have added sugar to the smoked salmon. You can find this at Whole Foods. Look for the sugar free sticker.
I then started making the same omelette at home.
I think I mastered it. Because there is no cheese to hold it together it tastes better with the veggies in the eggs and mine would never turn out before because I never used enough oil. So happy I figured this one out.
It may not look the greatest, but it is really good with the veggies and smoked salmon.
Grainless Cereal
I really like Two Moms brand and they just came out with a Grainless cereal. I hope they keep coming out with more grainless products. They also make a good dry snack.

Green Eggs & Salsa
My new favorite breakfast I've been making is
Green vegetables are less starchy
The combination of fiber, fat, and protein makes this a satisfying meal
- 1 egg & 2 egg whites
- zucchini
- spinach
- brocolli
- garlic
- Dairy-Free Hemp Seed Pesto (fm Basiltops found at the Farmers Market or buy online)
- Drews double fire roasted salsa
- with a little olive oil I cook the zucchini and brocolli
- add in the whisked eggs ( whisk them to fluff them up to seem like a lot)
- add in the spinach and fresh pressed garlic (watch out for adding the garlic in to early and burning it, which kills the taste)
- add in the pesto and cook until nice and fragrant (make sure you don't over cook the eggs)
- Put in your bowl and stir in a little salsa

green smoothie
Start your day with a green smoothie for natural energy. Greens help balance your mood, weight, and are packed with skin beautifying nutrients.
1. add in fruit (like berries)
2. Add in water
3. Add in Green (like kale- de-stemmed)
4. Blend
I also like to add some protein powder to get some protein with it, if I'm not going to eat protein with my shake.
I know the color looks a little scary, but it tastes sweet.
Start with more fruit and as your taste changes decrease the amount of fruit you add and increase the greens.
And if you have not gotten these great cups from Costco I highly recommend them. I'm trying to resist getting another set, but I keep having to wash them so often because I use them daily for my shakes, green tea, and water. It is so nice not to have to worry about using a coaster and it keeps things cold.
I also recommend drinking out of a straw to keep your teeth whiter.
