Green Eggs & Salsa

My new favorite breakfast I've been making is

  • 1 egg & 2 egg whites
  • zucchini 
  • spinach
  • brocolli
  • garlic
  • Dairy-Free Hemp Seed Pesto (fm Basiltops found at the Farmers Market or buy online)
  • Drews double fire roasted salsa 
  1. with a little olive oil I cook the zucchini and brocolli
  2. add in the whisked eggs ( whisk them to fluff them up to seem like a lot)
  3. add in the spinach and fresh pressed garlic (watch out for adding the garlic in to early and burning it, which kills the taste)
  4. add in the pesto and cook until nice and fragrant (make sure you don't over cook the eggs)
  5. Put in your bowl and stir in a little salsa 
Great way to get vegetables in early
Green vegetables are less starchy
The combination of fiber, fat, and protein makes this a satisfying meal
