- 1 egg & 2 egg whites
- zucchini
- spinach
- brocolli
- garlic
- Dairy-Free Hemp Seed Pesto (fm Basiltops found at the Farmers Market or buy online)
- Drews double fire roasted salsa
- with a little olive oil I cook the zucchini and brocolli
- add in the whisked eggs ( whisk them to fluff them up to seem like a lot)
- add in the spinach and fresh pressed garlic (watch out for adding the garlic in to early and burning it, which kills the taste)
- add in the pesto and cook until nice and fragrant (make sure you don't over cook the eggs)
- Put in your bowl and stir in a little salsa
Green vegetables are less starchy
The combination of fiber, fat, and protein makes this a satisfying meal
