Califlower Mock Mashed Potatoes
These really do have the consistency of mashed potatoes and they taste amazing. So easy to make. Just steam the cauliflower (I use one bag full from Trader Joe's), add nut milk (~1/4 cup), blend, pour into a 9x9 pan, sprinkle with paprika, and bake at 350 for 15-20 min.
I really like these thermos containers to take hot food on the go. I pour boiling hot water in it first, dump it out, and then put my meal in it. Stays nice and warm.
Cauliflower is so good for you and this whole pan is about 90 calories. Good way to get in more vegetables.
