Thanks so much to everyone who brought yummy healthy treats for the last day of boot camp!!!
I wasn't hungry after class, so I packed them up to save for later. I'm glad I did.
- Fruit Salad - thanks so much Shirin! It was so good. I love that you added in so many different types of fruit. It reminds me that I need to mix it up my my own fruit salads.
- Chocolate Banana Oatmeal- new favorite breakfast. (1/2 steel cut oatmeal, 1/4 reset protein powder, 1/2 banana) (192.5 calories)

At a Christmas party
I found out the they were having pulled pork for dinner, so I snuck in a scoop of peanut butter from the cabinet, since I don't care for pulled pork.
I looked at the dressing that they put in the cole slaw mix and it was 140 calories and 100 calories from Fat!!! Glad I did not have any.

Snack
Carrot muffin-Thanks Cathy! I'm so glad that Cathy made this because I've been wanting to try it. She made it with carrot cake mix and diet fresca. 40 calories and tasted like really good carrot cake.
ginger bread- Thanks Stacey! I also love ginger bread stuff. She made these for ~20-30 calories.
Stacey also brought these good peanut butter and jelly cookies! 86 calories.
Dinner
- White bean chili- Thanks so much for bringing this Katherine! I loved it! Thanks so much for printing out the recipe and bringing it. It had such great flavor and chili's are so great during this time of year. Great comfort food.
- I also threw together a spinach salad
- Still at the Christmas party- glad I brought this with me to just heat up, since they had pulled pork.
All the food was amazing at the last day of boot camp. Can you please find out the recipe for Shirin's fruit salad, and Stacy's gingerbread and peanut butter cookies? They were amazing! I am so craving the fruit salad right now.

ReplyDeleteDidn't you like the carrot muffins too- but that is an easy one to remember with just two ingredients. I love how Shirin put in such a variety of fruits. I was planning on making these as recipes of the week for the newsletter, but I will post them on the blog when I get it so you will have them sooner.
