January 15th


So...I've been really bad about taking my Juice Plus, since I never get sick. But since I recently got sick it was a huge wake up call that I need to be more consistent with taking them.
I love Juice Plus because they are the 17 most nutrient dense fruits and vegetables that are organic and vine ripened, and then juiced. They actually have a food label not a supplement label, which I like since I fully believe in whole foods. Therefore, they are more bio available for your body to break down and use. I will talk more about these in a later post.

I'm so excited this asparagus frittata turned out. I will make it a recipe of the week for the newsletter. I found this recipe in Fitness Magazine and it looked good, but then while I was making it I noticed that it called for 1 tablespoon olive oil, 1 tablespoon butter, and all real eggs, so of course I modified it and made it less calories and more vegetables.
I used 1/2 tablespoon Smart Balance instead of real butter and way less olive oil. I also used egg whites, egg substitutes, and 2 real eggs instead of all whole eggs.
So easy to make- I will try to experiment with making different types.
  • Leek, Spinach, Mushroom, & Asparagus Frittata (148.5 calories)
  • 1/4 cup fat free cottage cheese
  • 1 cup mixed berries (strawberries, raspberries, blueberries, & blackberries)

Okay...my husband Dan is a fireman and has been working all week 24 hr shifts and I won't see him again now until Monday or Tuesday because he is going on a surf trip to Mexico. So, today was our date day and we had free movie passes (thanks Michelle!). We went and saw the Grand Tarino- I did not think I would like it, but it was good. Dan got the popcorn shown below with butter, so my treat was a Diet Coke. That is a MEDIUM and includes a free refill- Really...what is America coming to. I don't support drinking Diet Coke, but it was my 10-20% of whatever. Plus, it made me feel like I was getting some kind of treat, since I know how many calories and in the popcorn and it is really not worth it.



I testing out Optimal Nutrition's food delivery service to see if it is a good thing to recommend for all of you boot campers who are really busy and have a hard time getting in healthy meals. I had a meeting with them on Wed. and picked up a few sample meals to try.

I tried a piece of my husbands enchilada and I had the pumpkin turkey feticinni.
They were both really good and my husband liked them too.

These are really big, chewy, & yummy! Nature's Path has some really great products I love, but a little disappointed that the nutrition facts label on the box and the packaging read two different things. One said 150 calories and 3g fiber and one said 160 calories and 2g fiber. One gram does make a difference if it said 2g I would not have bought it, but if it said 3g I would have and did. Wonder what it really is...

Still hungry. Ezekiel Sprouted Grain Tortillas are so good for you because they are a complete protein meaning they have all 9 essential amino acids. The large tortilla has 5 grams of fiber and 6 grams of protein. No yeast, no added oil, no baking powder, full of vitamins, minerals, and all organic.

Dinner
I already did the prep-work this morning for zucchini spaghetti, but really didn't feel like it. I feel totally guilty for just having Ezekiel tortilla w/ almond butter and low sugar jam for dinner, but it is just so so good. I did not feel like anything else. I'll have the zucchini for tomorrow.

On my way to boot camp again...wondering how I am going to get through the fourth leg workout when I can barely walk.
Took a shot of 2 tablespoons Apple Cider Vinegar to hopefully help speed up recovery.
ACV is one of those things that I just make myself do because of the positive health benefits, but it smells and tastes so bad. I just take it like a shot and always feel good about it afterward.

Debriefing Today...
If I could do today over again I would make sure I got in more carbs earlier on in the day, so I would not have been craving carbs in the afternoon. I though my banana and berries would have been enough, but for me personally I have found that my body feels best when I get in more complex carbs in earlier on in the day and then it makes it really easy to have more vegetables and protein for dinner.

I recommend listening and paying attention to what foods, portions, and timing of your meals give you the most energy, decrease cravings, and keep you feeling good.

Happy I made a new recipe that turned out okay. Trying new recipes, vegetables, and snacks can be a great way to avoid getting board with eating healthy and then venturing back into foods that are not as beneficial for your body.
