I made this eggplant ricotta cheese roll with roasted red pepper sauce from Shape Magazine.
Surprisingly, I didn't really like it until I added my own sauce from the night before (
classico spag. sauce w/ added spinach, mushrooms, and meal starters).

After I added my own sauce on top, it was good and even better as left overs the next day.
Very filling and my adding my own sauce I added even more protein with not much more added calories.
