Baby Jax


My sister in law Katie had baby Jax on Sunday 8/30. He is so adorable.


We drove up to Rancho in the morning, so I packed a spelt tortilla with 1 tablespoon of almond butter, 1/2 banana slices, and a sprinkle of cinnamon. It is a good portable breakfast that I could easily wrap up in foil and take with me to eat in the car.

For my snack, I took part of my dinner salad that I packed and put it in a tupperware.
2 oz grilled Ahi and 1 cup of zuchini and broccoli (125 calories)(cooked in coconut oil, sea salt, and sea vegetable sprinkle). The coconut oil makes the vegetables taste amazing!

We waited all day in the waiting room for baby Jax to get here. Luckily, we had lots of family and friends there that made the time more enjoyable. Larabar was a good snack that I stashed in my handbag for a snack (210 calories)
I made this hemp protein shake. I know it look disgusting, but I promise it is refreshingly good.
Hemp Protein Shake 340 calories
I put in 4 tablespoons hemp protein powder ( I will talk about the benefits and show the container in a later post)
1 cup unsweetened vanilla rice milk
1 cup spinach
1/2 banana
1 tablespoon Chia seeds

I packed my dinner in a disposable container.
Salad (~155 calories)
2 oz grille Ahi (fm trader joes)
Mixed greens/spinach
broccoli, zucchini (cooked in coconut oil, and sea vegetable sprinkle)

Dessert
Strawberries & blueberries (45 calories)

So much is said for planning ahead. We had no idea we would end up being there all day, but I just packed my food for the day in my cooler and was still able to enjoy healthy delicious food.
It was an exciting day being able to see the baby and he was able to go home yesterday.
