Yummy Peanut Butter Power Bars




Makes 18 bars

Ingredients:
1/2 cup packed brown sugar pinch salt
1/4 cup peanut butter 1/2 cup chocolate chips
1/4 cup unsweetened vanilla almond milk 1/4 c sliced almonds
1/4 cup Agave Nectar 1/4 cup sunflower seeds
1/4 cup Unsweetened Applesauce 2 Tbsp Ground Flaxseeds
1 Tsp Vanilla Cooking Spray
3/4 cup Whole Wheat Flour
3/4 cup Oats
1/2 Tsp Baking Soda

Instructions:
1. Pre-heat oven to 350 degrees.
2. In a large bowl, stir together brown sugar, peanut butter, milk, agave, applesauce, and vanilla. In a small bowl, stir together flour, oats, baking soda and salt.
3. Add oat mixture to peanut butter mixture along with chocolate chips, and all the nuts & seeds, stir until blended.
4. Spread batter into a 9x13 inch pan that has been sprayed with non-stick spray. The mixture will be sticky- it's easiest to use your hands, but dampen them first.
Bake for 20-25 min, until golden. Cook in the pan on a wire rack before cutting into bars.

The Skinny:
Calories 136

* Great to individually wrap in saran wrap and have as a pre/post workout boost, or I like to have it as a healthy cookie. I recommend wrapping and putting them in the freezer to make them last longer and helps to portion them out- cause they are yummy.

  • Allergy Friendly- Can replace the chocolate chips for homemade vegan chocolate chips, switch the whole wheat flour to a gluten free flour, and the peanut butter for almond butter.
  • I have not tried switching the brown sugar for a healthier sugar substitute yet, but I plan to next time I make them. I'm thinking about trying brown rice syrup, sucanat, or stevia. If anyone tries it, let me know how they are.
