These Collard wraps are and good way to get in more greens and super easy to make yourself, but when short on time you can buy them at Whole Foods & Jimbos.
The picture for this vegetable soup does not do it any justice, but I used fire roasted tomatoes so it has a lot of flavor. It is full of veggies and only has 30 calories a cup.
If you have a vita mix blender the recipe is in there on page 108. If you don't you could probably make it in the food processor.
3 cup canned tomatoes (fire roasted low sodium is the best)
1/2 head medium-sized cabbage, quartered
1 cup raw carrots
2 ribs celery
1 medium onion
1 huge handful of fresh spinach (the book says frozen, but fresh is always best)
4 vegetable bouillon cubes, or 8 teaspoons of soup base
1/8 teaspoon white pepper
pinch of rosemary
1 small garlic
water
It makes so much that I put in half the ingredients and then transfer it to a stock pot, then do the other 1/2.
It make 14 cups in 5-10 seconds.
I love having this on hand as an easy way to get in more vegetables, warming and comfort food, and easy to have with lunch or dinner.
