I had a zucchini hummus recipe on the NL a few weeks ago, but this one is easier and tastes much better. I love that it is bean free!
Zucchini Hummus from Make Every Day Raw
1 large zucchini in summer or 2 small zucchini in winter (at least in PA)
1/2 cup Tahini
2 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
1 Teaspoon Salt
1 Teaspoon Cumin
1 Large Garlic Clove
Sprinkle of Paprika
1/2 cup Tahini
2 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
1 Teaspoon Salt
1 Teaspoon Cumin

Sprinkle of Paprika
Put in food processor or vita mix.
Turkey Wrap
Sliced turkey
avocado
dijon mustard
wrapped in romain lettuce
