Breakfast/Dessert


Thanks so much Shirin for making the dessert for the nutritional seminar. We had this for dessert on Saturday, but it also makes a great breakfast item.

This was the recipe of the week for this weeks newsletter. It is so good for you. It is made with Greek yogurt, ezekiel cereal, berries, agave nectar, and almonds.
I had a mini one for breakfast today. I just left out the agave nectar.
I layered one container of Greek yogurt, 3 g sliced almonds, 1/4 cup blueberries, 2 strawberries, 1.5 tablespoons Ezekiel Flax cereal.
162 calories
Perfect breakfast! I have protein, healthy fat, fiber, and water. I'm still satisfied hours after. I always put thought into my food making sure I'm getting in what my body needs.

Nutritional Seminar


It was great seeing all of you ladies at the nutritional seminar. I just wanted to share some of the food from Saturday.
Mary's Gone Crackers with Light garlic herb laughing cow cheese.
The bean recipe that was the recipe of the week from the newsletter. One pot dishes that can easily be thrown together and provide fiber, protein, and water are good options to stay satisfied. Thanks Cathy for making this for us.

I really like the Mary's crackers with the tomato basil hummus from trader Joe's. It is full of flavor and only 35 calories for 2 tablespoons. It is really good with vegetables.
We also had two vegetable trays with a few vegetables that are really good, but many people may not have had before like daikon radish and jiciama. This is a picture of of what the jiciama looks like. I just cut the skin off and cut it up into sticks. It is full of fiber and water.
I also made a french onion and dill dip for the vegetables with greek yogurt and the simply organic mixes of seasonings.

a little behind

Sorry ladies I'm a little behind on updating the blog, but I have lots of good things to share with you.

Here is a picture of the Applegate Farms turkey I recommended on the grocery store tour. I like to have 1-2oz of this with .5-10z avocado and 1/2 ezekiel tortilla for a quick easy wrap.

I have been having the turkey a lot, so to mix it up I started adding in 2 tablespoons of beans with avocado and it is really good and quick to throw together.
These are the beans I like for my wrap. Amy's light in sodium.
I have not really been wanting to cook or make new recipes like I normally enjoy doing, so I have been eating really good meals that don't require much work. I just spend one day cooking several things and then it is done with for the next couple of days. I really like this Ahi from trader joes with mixed greens and avocado.
This Ahi is delicious and makes a quick and easy dinner ready in 10 minutes.

Yoga at Mission Bay with Claire

Hi Ladies,

Please join us and Claire Petretti (of Sculpt Fusion and Ocean Soul Yoga) for a great yoga class on Saturday, August 8th (after the Mission Bay boot camp). Nuttzo

I've heard a lot about this Nuttzo from boot campers and I finally tried it.
Thanks so much Cathy K. for getting this for me to try. I love it!!!! It is so good.
It is a combination of flax seed, sunflower seeds, Brazil nuts, almonds, etc.
It is a pretty expensive jar of nut butter, but so worth it. You can find it at Whole Foods and I think Jimbo's. I put it in the freezer to scoop a tablespoon out like ice cream. delicious!

Kamut & Millet Puffs


This is the cereal that I had for breakfast.
It is really healthy because it is organic, no added sugar, and a good way to get in whole grains.

Thursday July 23rd


Breakfast (210 calories) -at the Volvo Dealership, so I just packed my breakfast to go
  • 1 cup Kamut & Millet Puffs w/ unsweetened almond milk & blueberries
  • 2 egg whites with kelp seasoning
  • 4 oz Incredible Vegetable juice
Snack (223 Calories)
  • 1.5 oz just chicken (fm Trader Joes)
  • Mixed greens
  • 1 tablespoon Greens dressing
  • 1/2 Ezekiel tortilla

Snack (270 calories)
Protein shake to go
2 scoops chocolate Fit 365, 1 cup unsweetened vanilla almond milk, 1.5 tsp flaxseed oil

Snack
1/2 of the Greek yogurt with a few Mary's Crackers

Lunch
Stir Fry Quinoa Bowl
Quinoa, 1.5 Just Chicken, stir fried broccoli, zucchini, yellow squash, carrots, and coconut oil with kelp seasoning.
Dinner & Dessert
I had the same thing that I had for lunch for dinner. It is so good.

I put the Nuttzo in the freezer and it comes out like ice cream. I love it.
It looks like a little scoop of ice cream I just pick it up and bite into it.

Dining out in Palm Springs

Dinner at the Yard House with some friends in Palm Springs.
All the nutritional information for the Yard House is available online. I ordered the crunchy ahi salad with no crunchies and dressing on the side. The Ahi is so spicy. I also got a side of avocado for the salad.

They provided lunch for us, which was chicken salad. I just took the skin off the chicken and ate 3/4 of it and gave the rest to my husband.
We went out to a buffet breakfast with friend in the morning. I had an omelet made just how I like it at home with 1 egg, 2 egg whites, peppers, spinach, and no oil. I know it is not very exciting, but it is so good and starts my day off feeling great! I also had a side of smoked salmon and berries.

We went out for sushi for dinner. I ordered Sashimi and a side salad with avocado and just topped the salad with my sashimi.

Driving to Palm Springs


I packed these vegetable chips from Henry's for Dan. I like that they are actually green beans, squash, etc that are baked.
Some Starbucks has these little packages of lemon juice. They can shake them into your iced tea, which is a healthy thing to add to your drink instead of fake or real sugar. I wish all starbucks had these.

Sorry this picture is a little fuzzy, but we went to Babe's a BBQ restaurant. The menu was a challenge. I've looked up different BBQ places in the past, so I have a good idea of what all the nutritional information. I just ordered field greens with smoked salmon and avocado. I had 1/2 for dinner and saved half for later.

Smart & Final

We went to Palm Springs for a marriage getaway with the the Rock Church. I packed my cooler with food to take with me, but I don't like traveling and having to carry around my Tupperware, which is why I love Smart & Final. I stocked up at Smart & Final before I went. I know it is not the most "green" thing to do, but when I'm traveling or on the go it makes it so easy to still eat healthy and save money.



Here is what is in my cart. I love straws, disposable hot cups, cold cups, little salad dressing containers, & larger containers.


I packed mine and Dan's protein shake to drink in the car for the drive out to Palm Springs. I like having these cups, so I can just toss them instead of having a dirty protein shaker cup heating up in the car.

I also packed a great salad with salmon, grilled asparagus, mixed greens, and green garlic dressing in that little 1oz cup on the right side of the container.

Although, I'm spending a little more on the disposable containers, it still saves so much money bringing my own food then having to eat out. I did eat out while we were there and I will share that as well on another post.

What's in my Costco Cart?

I like to buy Smart water from Costco. My almonds are getting low, so I picked up another bag. I like to get the large container of the Fage Greek Total Zero yogurt. I got some avocados (so much cheaper than they are at the regular grocery store) to go with the Mary's crackers.

Rosanne told me that Costco now is carrying the Mary's Crackers, so I picked up a box. They only have the original and I think the herb tastes the best with my avocado, but they are a better price here and are still good. They are made with flax seed, quinoa, and brown rice, so they are a great whole grain snack.
She has also been telling me about these brown rice bowls, so I picked them up as well. They are individually portions of brown rice. I haven't tried them yet, but I will let you know how I like them when I do. I really like the TJ brown rice because it is a little sticky, but these are really good because they don't take up space in my freezer.

I'm always on a mission to just run into Costco and get the items I need and get out of there. I don't stroll the isles like I do at the grocery store, so I miss the new items they start carrying. She also told me that they are now carrying the Bob's Red Mill Organic Quinoa. I'm just so excited about this. Cooked in low sodium chicken or vegetable broth makes it really good. I love added it to my salads. Grains take longer to digest than fruits and vegetables, so going with an organic kind is best for your body.

Old Spaghetti Factory




We had so much fun for Cindy's birthday (the spotlight of the week from last weeks newsletter). She looked amazing for her birthday! We went to Old Spaghetti Factory downtown for dinner.
All the nutritional information is available online and it is so fun to see what everything is. So many dishes are over 1,000 calories. The Hearty Mizithra Cheese and Brown Butter is 1750 calories! Even the "baked chicken" is over 1,000 calories.
I got the minestrone soup (60 calories) with two side salads. This may sound a little weird, but I like to put some of the soup on the salad for the dressing. It is really good and the soups tasted good.

Monday 7/13

I feel so good when I get vegetable juice in early in the day. I really like the Evolution Incredible Vegetable. They can add up quick w/ the cost, so I don't always have the whole thing. I didn't have the full protein shake, so it didn't hinder my track workout. I just had ~1/4 of the shake.
  • 4oz incredible vegetable juice 45 calories
  • 1/4 protein shake 67.5 calories
Post-workout I had coconut water 60 calories
Track workout at La Jolla High School- needed to re-hydrate because it was so hot out even early in the morning.
Post-Workout
  • 1/2 Ezekiel tortilla, 1 oz avocado, 1oz turkey (145 calories)
  • 3/4 of my Protein Shake (Fit 365, 1.5 tsp flax oil, ice, unsweetened chocolate almond milk)= 202.5 calories
Snack- apple with Greek yogurt - 170 calories
Snack- Edamame 60 calories
Snack- Another Protein Shake- I just love it. It tastes like a chocolate shake to me and keeps me full.
270 calories.

Dinner- Mixed Greens (spinach, kale, baby romain), Quinoa, Salmon, and 1 tablespoon Annie's Green Garlic dressing
I used the salmon burger from Trader Joe's that are 80 calories and just put them on the grill w/ lemon and sea vegetable sprinkle. I like having them already cooked because they are so easy to just throw in my salads.
185 calories
