I saw these healthy eggs benedict at Whole Foods and loved the idea. 
But then I read the label and it has all good ingredients, but it has sugar :( It is probably such a small amount, but is it really necessary.
Anyways...It motivated me to make my own.  It only took 4 wasted eggs to finally figure out how to poach an egg, but I did it :) Praise God for You Tube! 
  • spinach 
  • tomato
  • poached egg
  • dijon mustard
  • paprika
I also added one of Lydia's Organic Luna Crackers to the bottom (like an English Muffin) and it was delicious!  These are expensive crackers, but they have great ingredients.
I love that the almonds are sprouted = more nutritious
Lots of fiber, protein, vitamin A, Calcium, & Iron :)
