Easy Recipe

Congratulations on getting through week one of class. I feel like the first week flew by so fast. I'm looking forward to this next week :)

Shannon send me this recipe.  I have not made it yet, but it looks really good and easy to make.
She said it is pretty substantial and would be good over chicken or a fish filet.  Could probably puree it and eat it as a soup too.

2.5 cups zucchini, thinly sliced (2 medium)
2 cloves garlic, minced or pressed
1/2 tsp cumin
1 8oz can tomato sauce
1 can diced tomatoes with chile
2 jalapeno peppers

Heat medium sauce pan over med-high heat, spray with oil.  Saute zucchini & garlic until crisp/tender.  Add cumin, sauce, tomatoes and jalapenos.  Bring to boil, reduce heat and simmer 15 minutes.  Remove & discard jalapenos.  Serve.
