IMPORTANT: Tomorrow's Carmel Valley 8:30am class CANCELLED

Hi Ladies,

We are very sorry for the short notice but tomorrow's Carmel Valley 8:30 a.m. class is CANCELLED. Jessica has to go out of town for the day, but there will be a substitute for the 6:15am class and Claire will be teaching yoga at 7:30am. We hope that you will still come enjoy this great opportunity tomorrow with Claire! Jessica will be holding a make-up class on Wednesday, July 15th at 8:30a.m.

Again, we very sorry for the inconvenience, but hope that you understand. If you are a regular in this later Carmel Valley class, please make sure to call or email any of your other friends in this class (just in case they don't check their emails often).

Chocolate Protein Shake

1 egg, 2 egg whites - whisked to make it fluffy

Important Updates and Reminders for the Last Week of Class!

Hi Ladies,

Here are a few very important updates and reminders for the last week of class:

1) Class Change: On Friday, July 3rd, the Torrey Hills 6:15am and 8:30am classes with both be held at Torrey Pines for a fun trail run. For any new girls, the directions are as follows (12600 North Torrey Pines Road) Exit from Hwy 5 at Carmel Valley Road. Drive west for about 1.5 miles until you reach the Coast Highway 101. Turn left and proceed along the beach for about a mile. The park entrance is on your right, please park on the highway and walk through the main gate. We will plan on meeting at the picnic tables and will leave promptly at the start of class, please be on time. Everyone is invited to join in this great work out!

2) Last Day of Class: Please don't forget that this Saturday, July 4th, is the last day of class (8-9:30am). Also, we will be holding this class at the Torrey Hills (Carmel Valley) location since it is a holiday and will be very busy at Mission Bay. For anyone that has never attended this class, the directions are as follows:
Interstate 5 exit on to Carmel Mountain Rd, exit 32 (from Local Bypass/CA-56). Turn Right onto Carmel Mountain Rd. Turn Right onto Vista Sorrento Pkwy. Turn Left at Calle Mar De Mariposa, past the elementary school, and into Torrey Hills Community Park.

3)Boot Camp Competition: We will hold a last chance weigh in for all girls that are participating in the current competition, at 7:45am. For all of you that have met your body fat goals but may be a pound or two off from your weight goal, you will have one more chance to be in the running for the grand prize. In order to stay in the competition you must be there on time and ready to be weighed!

4)Pot Luck Breakfast: We will be having a pot luck breakfast to celebrate the last day of class during our awards ceremony -- it would be great if you could bring a healthy baked good, snack, or any other healthy treat for girls to enjoy. :)

5)Shop and Swap: Since many of you have lost so much weight, there is no sense in keeping clothes in your closet that are too big! After class on Saturday, we will have a clothing swap where all of you girls can exchange clothes -- it's a great way to save money and to help other girls in the class.

Flaxseed Oil/ Granola Substitute



I love salads in my salad shaker with grilled salmon, kale, spinach, mixed greens, and Annie's green dressing.



I like to have some as the salad and add some to 1/2 and Ezekiel tortilla for a mini wrap.


The Ezekiel cereal on the greek yogurt with blueberries is great to add some crunch and a great alternative for high calorie, sugary granola. It is full of fiber, protein, and it is live sprouted grains.



I love the chocolate Fit 365 protein powder with the unsweetened chocolate almond milk. It tastes like a chocolate milk shake. I also started adding in 1.5 tsp Barlean's "The essential woman" flaxseed oil. It keeps me full for a long time.




The Annie's dressing is on sale at Vons. They don't a huge selection like the health food stores, but they have some good ones.

Quinoa Noodles


I forgot to add a picture of the box of Quinoa noodles from the recipe of the week, so I wanted to show you ladies what it looks like.


I like to mix it with grilled salon, Annie's Lemon chive dressing, and sea vegetable seasoning.

Grilled Mahi Mahi Bowl



This is not a great picture of this because you can't see the good stuff under the fish very well, but this was really good.
*Grilled Mahi Mahi
*Grilled zucchini, red & yellow peppers (grilled with olive oil and sea vegetable sprinkle)
*Black beans

*Mexican Seasoning that you can get with Vitamix

Food for the day



When I'm gone all day or have a busy day, I love to just prepare all my food for the day either the night before or the morning of. It makes it so much easier to not have to think about it and to only have one mess to clean up.
I'm loving the 100 calorie hummus from Costco.
I also use my salad shakers just about daily.
The cup is for my protein shake that I also like to have everyday, but waited to make it in the morning.
What I packed...

Breakfast (current favorite breakfast)
- Greek total zero yogurt w/ blueberries and raw almonds

Snack
- carrots, celery, radish, cucumber, jiciama with 100k pack hummus
- green apple

Lunch (so, so good!)
- Grill mahi mahi, grilled zucchini and red/yellow peppers, black beans, & corn (sprinkle of the Mexican seasoning that you can buy with the VitaMix)

Snack
- protein shake (Chocolate fit 365, 8oz unsweetened chocolate almond milk, 7 ice cubes)

Dinner
- salad (spinach, kale, baby romaine) with grilled salmon, 1 tablespoon Annie's Green dressing
-Quinoa noodles with grilled salmon and lemon chive dressing

Count Colors

Hi Ladies,

Don't forget that in your journals for this week I would like for you to count how many colors you are getting in and total that number on the bottom right hand side of the page. Focus on getting in a variety of colors everyday. Eat the rainbow.
Ex. carrots- orange
celery- green
apple- red
total - 3

I love to do enough prep work, so it is easy and already ready, but not so much that my produce is going to go bad faster. I like to put a variety of cut up vegetables in a quart size bag and then each day take some for my smaller zip lock bag to have with my hummus.
I like to add celery, carrots, radish, jicaima, cucumber, daikon radish, and zucchini.

Smoked Salmon Scramble
Recipe of the week
I like the combination the the green onions and the smoked salmon for something different.
I was surprised by how many packages of the smoked salmon had added sugar. I only found one that did not. I also check the sodium as well to find the lowest.

I really like my salad shaker from Target to pack my salad in.

I feel so energized juicing in the morning. I also had Greens powder to my juice. Does not look that good, but it tastes great.

I do either one or two green apples, carrots, celery, kale, & spinach. It is so good because the nutrients goes right into your system, so it is not lost in the digestion process.

I got a BBQ!!!! I'm so excited about this. I've been wanting one for a long time.

Dan was at work, so I was a little intimidated BBQing for the first time by myself. I've never used one before since my dad, husband, or brother have always been in charge of the grilling.

I cooked salmon, mahi mahi, zucchini, and asparagus.
It turned out great. I love it! I made a lot to have for the next few days.

Lunch- I feel like I accomplished something. I love trying new things.
I put the salmon and veggies over a salad.


I added some quinoa 1/2 way through, since it was still cooking. I made it with chicken broth to add more flavor.

End of Boot Camp Awards

With only a couple weeks left of boot camp, we thought that it would be great motivation for you to see what awards will be given at the end of the 12 weeks. On the last day of class, (Saturday, July 4th), we will be giving the following boot camp awards based on the criteria outlined below. 12 Week Appointment Times

12 week measurement appointment times listed below. Please call asap to get your desired appointment time.

To remain in the competition, you have to have your completed your 12 week appointment by Thursday July 2nd. If you are in the competition and have an earlier appointment and would like to do a final weight in on the last day of class, that will be available for you as well.

Please email staceyfit2wed@gmail.com with your top three appointments times.

If you are coming from work or on your lunch break, you can always change at my office into something you can take your measurements and body fat in if you need to.

I recommend wearing the same outfit as your initial appointments, so your after pictures are in the same outfit.

Appointments are 30 minutes for those signing up for the July 20th -October 10th boot camp and 15 minutes for those who are not signing up.

If you regularly take Brianna's class and would like to do your measurements with her, I also listed times available her her as well.

Healthy Food To Go


I got both of these salad shakers to compare, but I like them both for different occasions.
The square fit & fresh container has a built in freezer pack, so I don't have to put it in a cooler. It also has portable utensils. The dressing goes in the yellow part at the top and I just turn it to release the dressing in and shake it up. The good thing about this dressing release is that I can also just put a little bit of dressing and turn it to stop it from releasing the rest.
I just love it!!! I got it at Target.

The circle Shaker is from the Container store. This was one of the raffle prizes at class.
Some of the girls in class and my sister told me about this one. The dressing goes in the top and you just press it down to release the dressing and shake it up.
I like this for throwing in my cooler. They have a big one as well as a smaller size. I love huge salads, so I like the big one.


These were also raffle give aways for those who have been doing and bringing their journal to class.
They have the portion size labeled on the side of the container and the freezer pack on the top of the lid. I have so much difficulty with my freezer packs leaking on me, so I tried these and I like them. You can find them at Target.
These are such a great way to still eat healthy when you are not at home.

Good Finds at Costco!


Kristen in class told me about these and my mom had bought some for me while I was in Hawaii. I had one every day with lots of veggies. I love these!!! Portable packages of 100 calorie packs of hummus that do not have artificial preservatives. I found them at the Costco in Carmel Mountain.

My mom also bought these, which are great! Individual packages of wild salmon and wild Mahi Mahi. One the BBQ these are so good and easy to throw on top of a salad or fish taco.
I also found these at the Carmel Mountain Costco.

My mother-in-law Cathy said that she likes the little lulu bags for her lunches, so that is what I used to take my food on the plane to and from Hawaii.
It is the perfect size. I just put a freezer pack in. Next time I will just take my small cooler though.


I packed a salad with grilled salmon and lemon chive dressing.


For my snack I packed carrots, zucchini, and celery with 100 calorie pack of hummus.
I shared the vegetables with my husband.
I love these little packages of hummus from Costco!!!!

I packed 1/2 Ezekiel tortilla with 2oz applegate smoked turkey and the other 1/2 with 1 tablespoon almond butter and a few raspberries in between.


When I got back home I had no fresh food in the frig, so I make a protein shake with Vanilla Fit365, Unsweetened Vanilla Almond Milk, and frozen blueberries and raspberries. So delicious!
I also had some coconut milk for after the am boot camp class. It was so good to see all of you ladies again and so exciting to see even more dramatic changes in you ladies! I can tell there was no slacking when I was gone.

Cooking Light Fresh Food Fast

My mom knows me so well. She got me this great cookbook for our anniversary.
I love it. I love healthy good cookbooks with lots of pictures.
This cookbook is so good because the recipes have 5 ingredients or less, 15 minutes, and full of healthy good foods.

I also love that it is full of pictures!!!

Kaylani wanted this wedding dress and shoes for her birthday. It was so fun.

I knew they were having pizza, hot dogs, chips, and plate lunch, so I had a protein shake before the party. I packed this great salad with greens, lemon chive dressing, and grilled salmon to have instead.
