Fit2Wed's Bridal and Baby Shower






Hi Ladies,


With so many of our boot campers getting married and having babies, we thought that this would be a great time to celebrate all of the special occasions! This is going to be great party that you won't want to miss. Cathy Kenton and Katherine McNeill have so graciously offered to plan, coordinate, and host the entire event. They will arrange the food, drink, and gifts, but we ask if everyone could bring $10 to cover the costs of a small gift.

RSVP by 4/5 at the absolute latest, as we need to make sure we let them know how many guests will be coming. It is also very important that you say if you are a Bride or Expectant Mother in your RSVP reply. We want to make sure that we don't miss any of our ladies that we are celebrating!

In addition, please feel free to invite anyone that may not have been included on this list from class or even a friend, just simply add them to the Evite.

Crock-Pot Porridge Recipe

Hi Ladies,

Here is the delicious recipe that Shirin made yesterday for the last day of boot camp. Enjoy!

Crock-Pot Porridge

Ingredients
1/2 C Cracked Wheat
1 1/2 C Steel Cut Oats
1/2 C Rye Flakes (I used Quinoa Flakes)
1/2 C Brown Rice
1/4 C Wheat Germ
6 1/2 C water or any comination of liquids including rice, soy, almond or goat's milk to equal 6 1/2 cups - I used all Almond milk
1/2 C Raisins
1/2 C Chopped Dates
1 1/2 TBSPN Vanilla
Pinch Nutmeg
Pinch Cinnamon

Place all ingredients in a 3 quart or greater crock pot. Stir well to combine all ingredients and cover.

Set on lowest cooking temperature and cook over night.

Spoon into cereal bowls in the morning and top with walnuts, bananas & cottage cheese (optional & not included in the calorie count below)

Makes 8 one-cup servings
Calories: 313 calories/cup

Lentil Soup Recipe

Hi Ladies,

Here the recipe for the vegetarian lentil soup that Jody brought to the last day of boot camp.
In her own words, " This recipe is so simple, it makes a lot, so add more or less veggies depending on how much you want. Also, you can easily freeze leftovers. I made our bootcamp batch in my slow cooker, but you can also make it on the stove top in a large kettle. You can find many variations of this recipe on-line. There's also a recipe right on back of the bag of lentils. Most of the recipes call for some type of meat or sausage, but I just substitute different veggies for the meat."

1 bag (16oz) dry lentils (rinsed)
1 chopped red onion
5 chopped celery sticks
1 1/2 c. chopped carrots
1 chopped zucchini (green, yellow, or both)
1 14.5oz can diced tomatoes w/ roasted garlic (undrained)
1 8oz can corn
4-5 diced cloves garlic
1 heaping tsp dried oregano
1 heaping tsp dried thyme
1 heaping tsp celery salt or regular salt (add more for saltier flavor)
1-2 bay leaves (optional)
2 14.5oz can beef, chicken, or veggie broth
3 1/2 c. water

Once your veggies are all chopped and diced throw them into your kettle or slow cooker. Pour your seasonings on top, then add your broth and water. Cook in your slow cooker on low for 9-10 hours or on high for 5-6 hours. If you cook it stove top, cook on medium or med-high about an hour or until lentils and veggies are tender.

IMPORTANT Updates and Reminders!

Hi Ladies,

Here are a few very important updates and reminders:

1) On Friday, March 27th, the Torrey Hills 6:15am and 8:30am classes with both be held at Torrey Pines for a fun trail run. For any new girls, the address is 12600 North Torrey Pines Road (exit from Hwy 5 at Carmel Valley Road. Drive west for about 1.5 miles until you reach the Coast Highway 101. Turn left and proceed along the beach for about a mile. The park entrance is on your right, please park on the highway and walk through the main gate) . We will plan on meeting at the picnic tables and will leave promptly at the start of class, please be on time.  Everyone is invited to join in this great work out!

2) We will hold a last chance weigh in for all girls that are participating in the current competition, on Saturday, March 28th at 7:45am. For all of you that have met your body fat goals but may be a pound or two off from your weight goal, you will have one more chance to be in the running for the grand prize. In order to stay in the competition you must be there on time and ready to be weighed!

3) Please don't forget that this Saturday is the last day of class, I can't believe how fast this 12 weeks has gone.  All girls that are signing up for the next session, make sure that you have your applications and payment to me by that day in order to be in the running for either a $100 LuLulemon gift card or $100 off of the next class.  

4) For anyone  interested, we will be having a pot luck breakfast to celebrate the last day of class during our awards ceremony. It would be great if you could bring a healthy baked good for other girls to try!:)

5) Since so many of you have lost a great deal of weight, there is no sense in keeping clothes in your closet that are too big! After class on Saturday, we will have a clothing swap where all of you girls can exchange clothes -- it's a great way to save money and to help other girls in the class.

6) Last but not least, for any of you that signed up for the "Girls Night In" on April 5th, please make sure to bring your $5 to me by Saturday. 

I look forward to seeing all of you at class and am very excited by all of the amazing results that you have had in fitness assessments and measurements! Keep up the hard work:)

Just one last reminder to please RSVP today for the Fit2Wed and Optimal Nutrition's "Girls Night In." The time has changed to 11am on April 5th so it is more of a "Girls Afternoon In." :)

Even if you are not interested in ordering the ONI products at this time, this is going to be a great way to get to know one another and to try some awesome food. We will learn about the great products that ONI offers as well as having a 2 hour chat session where we can share our struggles and successes.

Optimal Nutrition Meal - Blackened Tilapia w/ Mango rice 295 calories (I love having these meals, so easy to just pop in the oven when I get home)

Vitamuffin- Chocolate Fig- first time I tried this flavor. It was okay, but I think I prefer the chocolate chunk and some of the other flavors better.


Dinner
I already made the salad this morning, washed the asparagus and zucchini, and defrosted the Ahi, so it was ready to go for dinner. I love to have all my food planned out for the day in the morning, so I don't even have to think about it during the day.
  • 4.5 oz Marinated Ahi fm Trader Joes
  • 1 cup asparagus (cooked on high heat for w/ zucchini for a few minutes w/ 1/2 spray olive oil)
  • 1 cup zucchini
  • Salad (kale, mustard greens, spring mix, parsley, tomato, avocado, italian dressing)

Dessert
I have a container full of 1/2 eaten bars, so I don't have to have the whole thing I can just break off a piece of which one I want.
1/4 Kids Cliff bar

Puffins w/ Raw Almonds

Waterfal Run


Thanks Carrie for sending me these pictures from Friday's run. Rancho Penasquitos Canyon has miles of great running trails.


There are lots of big and small hills, which is amazing strength training for your legs, scorches tons of calories, and will make you a faster runner.



Important Update for Fit2Wed and Optimal Nutrition's "Girls Night In"

Optimal Nutrition


Last week I picked up my first week of Optimal Nutrition meals. One bag for Dan and one for me. They have a home delivery service or a free pick up at various locations.
I wanted to test out Optimal Nutrition before recommending it to any of the girls in class.

It is so easy to go on the Optimal Nutrition website and input your information (weight, activity level, goal weight) and they calculate based on your goals and activity level how many calories you need and how many calories the meals are. Each meal has a printed label on it with my name and all the nutrition information for my meal.

I ordered the same meals for Dan and I, but mine are only 295 calories and average about 20g protein and his are 783 calories and average about 60g protein.

Dan's is the bigger stack mine is the smaller stack.

I was concerned about having the storage space in my refrigerator and freezer for the meals, but I was happy to see that they easily stack on top of each other because they are vacuum packed so they don't take up a lot of room.

The meals are so so good! The pictures don't give them justice to how much flavor they have.
They are all organic and they use great products/food. The lasagna had lots of great vegetables and lean turkey meat.

Mediterranean Chicken-
I keep them in the freezer and the night before I pull out what meal I want for the next day and put it in the refrigerator.
I just walk in the door pre-heat the oven to 350 and throw the meals into the oven for about 10min and they are done. I can also put them in the microwave if I needed to, but they taste better in the oven.


This meal I just heated up and threw in a container, so I could take it harmed up with me to work. I put it in an insulated cooler to keep it warm.

I love having the meals each day, so I only have to plan two of my meals and snacks. It saves me so much time, dishes, and adds in great variety. My meals are only $11, which I think is a great deal for having them all organic, balanced meals, enough protein, calories already calculated, fresh, and makes healthy eating easy. I think this is great for people who are really busy, trying to lose weight, moms who just had a baby, or for those who don't like to cook and clean.

They also keep in the freezer, which is great so you don't have to worry about them going bad if you didn't eat the meal.

They also ship nationwide, so if you don't live in San Diego, you can still get these great meals.

I've looked into several meal delivery services and really like what Optimal Nutrition has to offer. It is nice that they have a lot of options as to how many meals a day/week that you would like.

America's Finest City Half Marathon and 5k

Hey ladies,

After seeing how amazing you all did running to the waterfall in Torrey Hills yesterday (most girls ran over 7miles!!), I wanted to give you some information on the America's Finest City Half Marathon and 5k race on August 16, 2009. 

This is a great race and it would be even better if we could all ran as a Fit2Wed group! The half marathon is a beautiful race that begins at historic Cabrillo National Monument, with its majestic view of both San Diego Bay and the Pacific Ocean, follows scenic San Diego Bay and Harbor Island along the Embarcadero to the Start of India, winds through downtown San Diego, and ends in beautiful Balboa Park. The 5k course will run completely within Balboa Park.

There is a limit of only 7,750 (half marathon) and 1,500 (5k) runners, so you need to sign up ASAP. The price is $70 until May 16th for the Half Marathon and $25 for the 5k.

Rock 'n' Roll Marathon:Fit2Wed Water Station

Hi Girls!

If any of the Mission Bay ladies want to drop in on the Carmel Valley class this Friday, you are welcome to join us for this incredible trail run to a beautiful waterfall. You are also welcome to bring a friend for free (even the men are welcome to this class, if they want to join us ladies)

Important Information: I would hate for you to come late and miss this awesome workout or not be able to find us. In order to make it there and back in time, it is important that you arrive to class early because we will be leaving the park exactly at 6:15am and 8:30am. You know I like to keep the workouts a surprise, but I'm just so excited about this one I had to let you know, so you don't miss out.

I also have a group leaving class a little earlier at 6am and at 8am, so they can make sure they get there and back by the end of class.

chicken quesadilla

This is a must make for sure.  My husband loved it.  
Chicken Quesadillas 
I used 
  • 2 mini Ezekiel Tortillas
  • 1/2 oz  lite mexican cheese (TJ)
  • 2 oz chicken 
  • 1/2 tsp low sodium taco seasoning (cooked chicken with) 
  • Put in all in the Panini grill for 5 min. 
  • I made my own quacamole (1 oz avocado, red onion, garlic, lime)
  • 1 tablespoon Greek Total Zero Yogurt
  • 1 tablespoon roasted tomato salsa (TJ)
343 calories 
Love the Panini grill- so easy 
I keep the Ezekiel tortillas frozen, so they last longer.

March 11th

Easy Pre-workout Breakfast
  • 1/2 cup Greek Total Zero Yogurt (The Carmel Mountain Costco now carries a big container of the Fage Greek Total Zero Yogurt!!!!)
  • 1/2 grapefruit
  • 43g banana
Post-workout Breakfast (all this for 281 calories)
Complete breakfast and a great way to get in vegetables early in the day.  
  • 1/2 orange
  • tomato basil la tortilla
  • 1 cup spring mix w/ roasted tomato salsa on top
  • 1 egg + 1/4 cup egg whites 
  • 1 cup spinach/kale/basil
  • garlic 
  • 1/4 cup red pepper
  • 1/2 spray olive oil
  • 1 tablespoon cottage cheese 
  • Breakfast Fruit and Nut Cookie  123.2 calories (I made from the Eat Clean Cookbook- it is like a scone- I will have it as one of the recipes of the week for the newsletter) 
  • 1/2 medifast w/ 1 cup black coffee
Snack
  • apple w/ cinnamon
  • tru choc
  • 1 cup cherrios w/ peanut butter chips, 1/3 cup puffins w/ 7 raw almonds
Snack- while I made tortilla soup
Spicy Soy and Flax Chips w/ Roasted tomato salsa (145 cal) 
This is everything that went into the tortilla soup- recipe from the vita-mix blender cookbook
I love that it is literally full of vegetables!!!  The recipe doesn't call for spinach and kale I just added that in.  
So easy to make I just throw everything into the vita-mix blender
only 104 calories per cup
Dinner
easy salad with spring mix and italian dressing
Jicama sticks w/ homemade guacamole (72.5 calories) 
I got this idea from the Great News Cooking Class- It is a good way to get in more vegetables.  Next time I will try adding in Greek Yogurt, or edename to make it a complete meal with protein, fiber, water, and healthy fat.  
  • 1.5 oz avocado
  • red onion 
  • garlic
  • lime 

Tortilla Soup w/ soy n flax chips on top
the soup is not supposed to be green- it just turned green because I added kale and spinach
I know it doesn't look as appetizing green, but it really does taste just as good and I feel like I'm eating even healthier since it is green.  With the Vita-Mix blender I'm able to preserve so much of the enzymes and nutrients in the vegetables that typically get destroyed through the cooking process.  Worth every penny!  However, if you do not have the Vita-Mix blender I'm sure you could just put it in a food processor and heat it on the stove.  
I did not plan on eating this in my car.  I made this in the afternoon to have for dinner, but ended up going to visit a friend in the hospital.  Luckily, I already had this made and just threw it in my cooler.  

Peanut Butter Chips


New Favorite Sweet Treat
Wish I would have discovered these a long time ago.  I've been adding these pb chips to plain dry Cherrios as a dessert and it is so good.

The Sunspire brand is great because they are made from all-natural MaraNatha peanut butter.  2 tablespoons/15 g= 80 calories 
  • contain nothing artificial
  • no trans fats
  • no hydrogenated oils
That's my food scale I use from Crate N Barrel- waiting for it to break, so I can get the nice one from Target that has the codes to input.  I might just break down and buy it, since I use it everyday.

March 10th

Packed this in the morning to have after boot camp (had 1/2 in between class 135 cal w/ 1/2 my wrap for lunch and the other 1/2 after the second class) 
  • Ezekiel English muffin toasted
  • 1 tablespoon almond butter
  • berries
wrapped in foil and took to go
Pre-workout breakfast (314.5) 
  • 1/2 medifast w/ black coffee
  • steelcut oatmeal w/ 1/2 scoop Jay Robb Reset protein powder, 1/2 cup berries, 1 tsp flaxseed, 1 tsp wheat germ
Lunch
  • 1/2 wrap ( so good- La Tortilla Factory Tortilla(tomato basil, spring mix, basil, 2 squares light laughing cow, sun dried tomato, 1/2 oz avocado, italian dressing) a must make for sure.  Thanks Rosanne for the idea of adding in sun dried tomatoes!!! (1/2 wrap = 112.25 calories) 
  • salad (1/2 oz avocado, red leaf lettuce, spinach, kale, spring mix, italian dressing) 
  • apple 
  • tru chocolate

Dessert Snack
  • Cherrios, bran flakes, granola, dark chocolate chips, peanut butter chips, 1/8th larabar
Dan brought this granola home for me to check out- I love it!  It is really good and great for dessert.  
I love the Earthbound Farm Organic Greens.  I like to stack up boxes of Arugula, Baby Greens, Red Leaf Lettuce, Spinach, and baby Romain.  I know that I have to have at least one to two servings a day or it will go bad and I will just be wasting money throwing it out. 
I have found this brand to be one of the freshest and best pre-washed Organic lettuce.  
Bought this Halibut from Whole Foods and made the recipe on the back.
It was good, but I don't recommend this Halibut.  At least for me, I don't like having the bone in the fish.  

This is the salsa recipe I found on the back of the Halibut (basil, tomato, red onion, etc) 
The salsa over the fish was great.  Dan said "I can make any crappy dish and just put a good sauce like this over it and it will taste great"
I had the fish over field greens.
